4 large flour tortillas

2 cups sharp cheddar cheese, grated

1 large apple (such as Granny Smith or Honeycrisp), cored and thinly sliced

1 tablespoon butter

1 tablespoon honey (optional, for drizzling)

1 teaspoon cinnamon (optional, for added flavor)

Fresh arugula or spinach (for serving, optional)

Instructions
 

Preheat skillet: Heat a non-stick skillet over medium heat.

    Prepare the filling: In a bowl, combine the grated cheddar cheese with the optional cinnamon. Set aside.

      Assemble the quesadilla: Place one tortilla in the preheated skillet. On half of the tortilla, sprinkle a generous amount of the cheese mixture, followed by an even layer of apple slices. Top with a little more cheese, then fold the other half of the tortilla over the filling.

        Cook the quesadilla: Cook for 3-4 minutes or until the bottom is golden and the cheese begins to melt. Carefully flip the quesadilla using a spatula, and cook for another 3-4 minutes until the other side is golden brown and crispy.

          Repeat: Remove the quesadilla from the skillet and set aside. Repeat steps 3-4 with the remaining tortillas and filling, adding butter to the skillet as needed.

            Cut and serve: Cut the quesadillas into wedges and arrange them on a serving plate. Drizzle with honey if desired, and serve with fresh arugula or spinach on the side for a pop of color and freshness.
