Ingredients

2 cups rolled oats

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

2 cups almond milk (or any milk of your choice)

1/4 cup maple syrup (or honey)

2 large eggs

1 teaspoon vanilla extract

2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work great)

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup raisins or dried cranberries (optional)

Extra apple slices and nuts for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line an 8x8 inch baking dish with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir well to combine.

Prepare Wet Ingredients: In a separate bowl, whisk together the almond milk, maple syrup, eggs, and vanilla extract until smooth and well combined.

Combine Ingredients: Pour the wet mixture into the dry ingredients, then add the diced apples, nuts, and raisins (if using). Fold everything together gently to ensure all oats and apples are well coated.

Transfer to Baking Dish: Pour the oat mixture into the prepared baking dish, spreading it out evenly. You can add extra apple slices and nuts on top for added texture and presentation.

Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the oatmeal has set. You can test doneness by inserting a toothpick; it should come out clean.

Cool and Serve: Allow the baked oatmeal to cool for a few minutes before slicing. Serve warm, topped with a drizzle of additional maple syrup, a splash of milk, or a dollop of yogurt if desired.

Store Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave for a quick breakfast!
