1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup whole milk

1 ½ cups peeled and diced apples (about 2 medium apples)

½ cup brown sugar, packed

1 tsp lemon juice

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.

    Prepare the Apple Mixture: In a medium bowl, toss the diced apples with lemon juice, then sprinkle brown sugar over them. Set aside to let the apples absorb the flavors.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

        Cream Butter and Sugar: In another bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 3-4 minutes.

          Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

            Combine Mixtures: Gradually add the dry ingredient mixture to the butter mixture, alternating with the milk. Begin and end with the flour mixture. Mix until just combined; do not overmix.

              Fold in Apples: Carefully fold the prepared apple mixture into the batter, ensuring that the apple pieces are evenly distributed throughout the batter.

                Fill and Bake: Scoop the batter into the prepared cupcake liners, filling each about 2/3 of the way full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

                  Cool the Cupcakes: Once baked, remove the cupcakes from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
