Apple Cinnamon Monkey Bread Muffins

2 cups of refrigerated biscuit dough (about 8 biscuits)

1 medium apple, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup of granulated sugar

1 tablespoon of ground cinnamon

1/4 cup of unsalted butter, melted

1/4 cup of brown sugar

1 teaspoon of vanilla extract

1/4 teaspoon of nutmeg (optional)

Cooking spray (for greasing the muffin tin)

For the glaze:

1 cup of powdered sugar

2-3 tablespoons of milk

1/2 teaspoon of vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or line with paper liners.

    Prepare the Biscuit Dough: Open the biscuit dough package and cut each biscuit into quarters. Place the quartered pieces into a large mixing bowl.

      Mix Sugar and Cinnamon: In a small bowl, stir together the granulated sugar and ground cinnamon. Pour the cinnamon sugar mixture over the biscuit pieces and toss until well coated.

        Add Apple and Melted Butter: Add the diced apple into the bowl with the biscuit mixture, then pour the melted butter over the top. Gently mix until everything is evenly combined.

          Fill the Muffin Tin: Evenly distribute the apple and biscuit mixture into the prepared muffin tin, filling each cup about 2/3 full.

            Add Brown Sugar and Vanilla: In a separate small bowl, combine the brown sugar, vanilla extract, and nutmeg (if using). Spoon a small amount of this mixture over each muffin cup for an extra layer of sweetness.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.

                Cool: Once baked, remove the muffins from the oven and let them cool in the tin for about 5-10 minutes before transferring them to a wire rack to cool completely.

                  Prepare the Glaze: In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and drizzly. Adjust the consistency by adding more milk if needed to achieve your desired thickness.
