Ingredients

2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup unsalted butter, cold and cubed

1/2 cup apple, peeled and diced (preferably Granny Smith or Honeycrisp)

1 large egg

1/2 cup heavy cream (plus more for brushing)

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

Coarse sugar, for sprinkling (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, salt, and ground cinnamon. Whisk together until well mixed.

Cut in Butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.

Add Apples and Nuts: Gently fold in the diced apple and nuts (if using) until they are evenly distributed throughout the mixture.

Mix Wet Ingredients: In a separate bowl, whisk together the egg, heavy cream, and vanilla extract.

Combine Mixtures: Pour the wet ingredients into the dry mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

Shape the Dough: Lightly flour your work surface and turn the dough out onto it. Knead gently 2-3 times to bring it together, then shape it into a disc about 1-inch thick.

Cut the Scones: Using a sharp knife, cut the disc into 8 equal wedges. Place the scones on the prepared baking sheet, spacing them about 2 inches apart.

Brush and Sprinkle: Brush the tops of the scones with a bit of heavy cream and sprinkle with coarse sugar for a delightful crunch.

Bake: Place the scones in the preheated oven and bake for 15-20 minutes, or until they are golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Let the scones cool on the baking sheet for a few minutes before transferring them to a wire rack. Serve warm with clotted cream or your favorite jam!
