Avocado Chicken Salad Cups

2 cups cooked chicken breast, shredded or diced

1 ripe avocado, peeled and pitted

1/4 cup Greek yogurt (plain)

1 tablespoon mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lime juice (freshly squeezed)

1/4 cup red bell pepper, finely diced

1/4 cup red onion, finely chopped

1/3 cup cilantro, chopped (optional)

Salt and pepper to taste

1 head of Romaine lettuce or endive leaves for serving

Cherry tomatoes, halved (for garnish)

Instructions
 

Prepare the Chicken: If using leftover chicken, shred it into small pieces. You can also cook chicken breasts in a pressure cooker or boil them in salted water until fully cooked (about 15-20 minutes). Allow to cool and then shred.

    Mash the Avocado: In a large mixing bowl, add the ripe avocado. Using a fork, mash it until smooth but still chunky.

      Mix in the Base: Add the Greek yogurt, mayonnaise, Dijon mustard, and lime juice to the mashed avocado. Stir until well combined.

        Combine Ingredients: Add the shredded chicken, diced red pepper, chopped red onion, and cilantro (if using) to the avocado mixture. Gently fold until everything is well coated. Season with salt and pepper to taste.

          Assemble the Cups: Carefully separate the leaves of Romaine lettuce or endive. Spoon the chicken salad mixture generously into each leaf.

            Garnish and Serve: Top each filled lettuce cup with halved cherry tomatoes for an added burst of color and flavor. Serve immediately for the best texture, or refrigerate for up to 30 minutes before serving.
