Ingredients

2 ripe avocados

4 slices of sourdough bread (or your preferred bread)

1 cup cherry tomatoes, halved

2 tablespoons balsamic glaze

2 tablespoons extra virgin olive oil

1 clove garlic, minced

1 teaspoon lemon juice

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Red pepper flakes, for a hint of spice (optional)

Instructions

Toast the Bread: Begin by toasting the sourdough bread slices until golden brown and crispy. You can use a toaster or a skillet for this.

Prepare the Avocado: In a bowl, scoop out the ripe avocados and mash them with a fork. Add the minced garlic, lemon juice, and a pinch of salt and pepper to taste. Mix until combined and creamy. Set aside.

Create the Tomato Mixture: In another bowl, combine the halved cherry tomatoes with olive oil, balsamic glaze, and a pinch of salt and pepper. Gently toss to ensure the tomatoes are well coated.

Assemble the Toast: Spread a generous amount of the avocado mixture over each slice of toasted sourdough.

Top with Tomatoes: Pile the balsamic-coated cherry tomatoes on top of the avocado layer, ensuring even distribution.

Garnish: If desired, sprinkle some red pepper flakes for heat and add fresh basil leaves for color and flavor.

Serve: Drizzle with additional balsamic glaze if you like and serve immediately for the best flavor and texture.
