Ingredients

2 cups cooked chicken breast, shredded or diced

1/2 cup Greek yogurt (plain)

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 apple, diced (preferably a sweet variety)

1/2 cup celery, finely chopped

1/4 cup red grapes, halved

1/4 cup walnuts, chopped (optional)

Salt and pepper, to taste

4 large spinach or whole grain wraps

Leafy lettuce (such as romaine or butter lettuce) for wrapping

Fresh herbs (like dill or parsley) for added flavor (optional)

Instructions

Prepare the Chicken Salad: In a large mixing bowl, combine the shredded chicken, Greek yogurt, mayonnaise, Dijon mustard, and lemon juice. Mix until well combined.

Add Fruits and Vegetables: Fold in the diced apple, chopped celery, halved grapes, and walnuts (if using). Season the mixture with salt and pepper to taste. If you’re using fresh herbs, mix them in at this stage for an aromatic kick.

Assemble the Wraps: Lay out a large wrap on a clean surface. Place a leaf of leafy lettuce in the center, and top with a generous scoop of the chicken salad mixture.

Wrap It Up: Fold in the sides of the wrap and then roll it tightly from the bottom up, ensuring the filling is well packed.

Slice and Serve: Cut the wrap in half diagonally, secure with toothpicks if desired, and serve immediately. If packing for a school lunch, wrap it tightly in foil or parchment paper to keep it fresh.

Optional Garnishes: Consider adding a side of baby carrots or sliced cucumbers for some extra crunch and nutrition.
