8 oz elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon mustard powder

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt and black pepper to taste

1/2 cup breadcrumbs (optional for topping)

Fresh parsley for garnish

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Roux: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until bubbly and golden, stirring continuously to avoid burning.

      Create the Cheese Sauce: Gradually pour in the whole milk while whisking constantly to prevent lumps. Continue to cook and stir until the mixture thickens, about 5-7 minutes.

        Flavor the Sauce: Add mustard powder, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir well to combine.
