Baked Apple French Toast Muffins

4 cups day-old bread, cubed (like brioche or challah)

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 cup brown sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

2 tablespoons unsalted butter, melted

Maple syrup (for serving)

Prep the Muffin Pan: Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin with non-stick spray or butter.

    Prepare the Bread: In a large bowl, combine the cubed bread and diced apples. If using nuts, mix them in as well. Set aside.

      Make the Custard Mixture: In a separate mixing bowl, whisk together the eggs, whole milk, heavy cream, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.

        Combine: Pour the custard mixture over the bread and apple combination, gently folding until the bread is completely coated. Allow the mixture to sit for 10-15 minutes to soak up the custard.

          Fill the Muffin Cups: Using a spoon or an ice cream scoop, evenly distribute the mixture into the prepared muffin cups, filling each cup about 3/4 full.

            Add Butter: Drizzle the melted butter over the tops of the muffins for added richness.

              Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the muffins are puffed and golden brown on top. A toothpick inserted into the center should come out clean.

                Cool and Serve: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack. Serve warm with a drizzle of maple syrup.
