Baked Mozzarella Cauliflower Bites

1 medium head of cauliflower, cut into small florets

1 cup shredded mozzarella cheese

1/2 cup grated parmesan cheese

1/2 cup almond flour (or breadcrumbs for a different texture)

2 large eggs

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, or a blend)

1/2 teaspoon red pepper flakes (optional, for spice)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Boil the Cauliflower: In a large pot of salted boiling water, add the cauliflower florets and cook for 5-7 minutes until tender but still firm (al dente). Drain well and let cool slightly.

      Mash the Cauliflower: Once the cauliflower is cool enough to handle, use a clean kitchen towel or cheesecloth to squeeze out any excess moisture. Then, place the cauliflower in a large mixing bowl and mash it with a fork or masher until it’s finely chopped.

        Mix Ingredients: To the mashed cauliflower, add the mozzarella cheese, parmesan cheese, almond flour (or breadcrumbs), eggs, minced garlic, Italian herbs, red pepper flakes (if using), and salt and pepper. Mix everything until well combined and a dough-like consistency forms.

          Shape the Bites: Take small portions of the mixture and roll them into balls or shape them into bite-sized patties using your hands, about 1-2 inches in diameter. Place them on the prepared baking sheet, ensuring they are spaced evenly apart.

            Bake: Bake in the preheated oven for 20-25 minutes or until they are golden brown and crispy on the outside. For an extra crispy outside, you can broil them for the last 2 minutes, watching closely to prevent burning.
