Baked Pumpkin Churros

1 cup pure pumpkin puree

1/2 cup unsalted butter

1/2 cup brown sugar

1 teaspoon vanilla extract

1/2 teaspoon salt

1 1/4 cups all-purpose flour

1 teaspoon cinnamon

1 tablespoon pumpkin pie spice

3 large eggs

1 cup granulated sugar (for coating)

1/2 teaspoon ground cinnamon (for coating)

Optional: melted chocolate or caramel sauce for dipping

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Dough: In a medium saucepan over medium heat, combine the pumpkin puree, unsalted butter, brown sugar, vanilla extract, and salt. Cook, stirring continuously, until the butter melts and the mixture is smooth, about 2-3 minutes.

      Add the Dry Ingredients: Remove the saucepan from heat and stir in the flour, cinnamon, and pumpkin pie spice until a dough forms. Keep stirring until it pulls away from the sides of the pan and forms a smooth ball, approximately 1-2 minutes.

        Incorporate Eggs: Allow the dough to cool for a few minutes. Then, add the eggs one at a time, mixing thoroughly after each addition until the dough is smooth and glossy.

          Pipe the Churros: Transfer the dough into a piping bag fitted with a star tip. Pipe churro lengths about 5 inches long onto the prepared baking sheet, leaving space between each churro.

            Bake the Churros: Bake in the preheated oven for 15-18 minutes, or until the churros are golden and set.

              Prepare the Coating: While the churros are baking, mix the granulated sugar and ground cinnamon in a shallow dish.

                Coat the Churros: Once baked, remove the churros from the oven and let them cool slightly (1-2 minutes). Roll each churro in the cinnamon-sugar mixture until fully coated.
