Baked Spinach Mushroom Lasagna Rolls

9 lasagna noodles

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

8 oz mushrooms, sliced

4 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves, for garnish

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the lasagna noodles: Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.

      Sauté the vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until transparent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute. Add the sliced mushrooms, cooking until they've softened, about 5 minutes. Finally, add the chopped spinach and cook until wilted. Remove from heat and let it cool slightly.

        Prepare the filling: In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, beaten egg, dried oregano, salt, and pepper. Mix until well combined. Stir in the sautéed spinach and mushroom mixture.

          Assemble the rolls: Spread a ladle of marinara sauce on the bottom of a baking dish (about 1 cup). Take a lasagna noodle and spread about 2-3 tablespoons of the filling at one end. Roll it up tightly and place it seam-side down in the baking dish. Repeat this for the remaining noodles.

            Top with sauce and cheese: Once all the rolls are in the baking dish, pour the remaining marinara sauce evenly over the top. Sprinkle the extra mozzarella cheese over the sauce.

              Bake: Cover the dish with foil (to prevent burning) and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
