Ingredients

4 boneless, skinless chicken breasts

1 cup sliced mushrooms (cremini or white)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup Swiss cheese, shredded

1/2 cup balsamic vinegar

1/2 cup chicken broth

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C).

Season the chicken: Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, thyme, and oregano.

Sauté the vegetables: In a large oven-proof skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5-7 minutes. Add the minced garlic and sliced mushrooms, and sauté until the mushrooms are browned and any liquid released has evaporated, about 5-6 minutes.

Deglaze the pan: Pour in the balsamic vinegar and chicken broth, scraping up any brown bits from the bottom of the skillet. Simmer for 2-3 minutes to reduce slightly.

Nestle the chicken: Place the seasoned chicken breasts into the skillet with the mushroom mixture, ensuring they are somewhat submerged in the sauce.

Top with cheese: Sprinkle the shredded Swiss cheese evenly over the chicken and vegetable mixture.

Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the cheese is melted and bubbly.

Serve: Remove from the oven and let it sit for 5 minutes. Garnish with freshly chopped parsley before serving. Enjoy your Balsamic Mushroom and Swiss Chicken Bake with a side of rice or a fresh salad!
