Beef Lettuce Wraps with Peach Glaze

1 lb ground beef (80% lean)

1 tablespoon olive oil

2 cloves garlic, minced

1 inch piece of ginger, minced

1 small onion, finely chopped

1 bell pepper, finely chopped (any color)

1 cup mushrooms, finely chopped

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons hoisin sauce

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon rice vinegar

1 cup peach preserves

1 tablespoon lime juice

Salt and black pepper to taste

1 head of butter or romaine lettuce, leaves separated and washed

Optional toppings: chopped green onions, cilantro, crushed peanuts

Prepare the Peach Glaze: In a small saucepan, combine the peach preserves, lime juice, soy sauce, and sriracha over medium heat. Stir until smooth and heated through. Reduce heat to low and keep warm.

    Cook the Beef Filling: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and ginger, sautéing until fragrant (about 30 seconds).

      Add Vegetables: Stir in the onions and bell peppers, cooking until they soften (about 3-4 minutes). Add the chopped mushrooms and cook for another 2-3 minutes until they release their moisture.

        Brown the Beef: Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and cooked through (approximately 5-7 minutes). Drain any excess fat if necessary.

          Season the Mixture: Stir in the hoisin sauce, rice vinegar, and season with salt and black pepper to taste. Allow the flavors to meld on low heat for about 2 minutes.

            Assemble the Wraps: Take a lettuce leaf and spoon a generous amount of the beef mixture into the center. Drizzle with warm peach glaze and add optional toppings like chopped green onions, cilantro, or crushed peanuts.
