2 medium zucchinis (for zoodles)

1 cup cooked shredded chicken

1/2 cup buffalo sauce (adjust to taste)

1 cup cauliflower florets (fresh or frozen)

1/2 cup unsweetened almond milk (or any milk of choice)

1/4 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1 tsp garlic powder

Salt and pepper to taste

Olive oil spray

Fresh parsley, chopped (for garnish)

Shredded mozzarella cheese (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Zoodles: Using a spiralizer or vegetable peeler, create zoodles from the zucchinis. Set them aside on paper towels to absorb excess moisture.

      Make Alfredo Sauce: In a medium saucepan, add the cauliflower florets and cover them with water. Bring to a boil and cook for about 5-7 minutes until tender. Drain and transfer to a blender. Add almond milk, cream cheese, Parmesan cheese, garlic powder, salt, and pepper. Blend until smooth and creamy. Adjust seasoning as necessary.

        Combine Chicken and Sauce: In a bowl, mix the shredded chicken with the buffalo sauce until evenly coated. Set aside.
