Caprese Pasta Salad with Balsamic

8 oz (about 2 cups) pasta (fusilli or penne work great)

1 ½ cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), drained and halved

1 cup fresh basil leaves, torn into pieces

½ cup extra virgin olive oil

¼ cup balsamic vinegar

1 clove garlic, minced

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Optional: ¼ cup grated Parmesan cheese for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Prep the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper until emulsified.

      Combine Ingredients: In a large mixing bowl, add the cooked pasta, halved cherry tomatoes, mozzarella balls, and torn basil leaves.

        Dress the Salad: Pour the balsamic dressing over the pasta mixture and gently toss until everything is well coated.

          Chill the Salad: Allow the salad to sit for at least 15-30 minutes to let the flavors meld together. This step is key for enhancing the flavors.
