1 cup pumpkin puree

1/2 cup heavy cream

1/2 cup caramel sauce (store-bought or homemade)

1/3 cup sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 envelope (1 tablespoon) unflavored gelatin

2 tablespoons cold water

Crushed graham crackers (for garnish)

Whipped cream (for topping)

Instructions
 

Prepare Gelatin: In a small bowl, sprinkle the gelatin over the cold water. Let it sit for about 5 minutes to bloom.

    Heat Pumpkin Mixture: In a medium saucepan, combine the pumpkin puree, sugar, vanilla extract, cinnamon, nutmeg, and salt. Cook over low heat, stirring occasionally, for about 5 minutes until the mixture is warm and sugar is dissolved.

      Combine Gelatin: Add the bloomed gelatin to the warm pumpkin mixture. Stir continuously until the gelatin is fully dissolved, making sure the mixture doesn’t boil. Remove from heat and allow it to cool slightly.

        Whip Cream: In a separate bowl, whip the heavy cream until soft peaks form. Gently fold about half of the whipped cream into the pumpkin mixture until fully incorporated.

          Fold in Remaining Whipped Cream: Carefully fold in the remaining whipped cream to maintain lightness and volume in the mousse.

            Assemble Cups: Spoon or pipe the pumpkin mousse into individual serving cups (about 3/4 full). Drizzle caramel sauce on top, then refrigerate the cups for at least 2 hours to set.

              Serve: Once set, remove the mousse cups from the fridge. Top with a dollop of whipped cream, a drizzle of caramel sauce, and a sprinkle of crushed graham crackers for added texture and flavor.
