Cauliflower Rice Stir Fry

1 medium head of cauliflower (or 4 cups cauliflower rice)

2 tablespoons olive oil (or sesame oil for a more Asian flavor)

1 cup mixed bell peppers, diced (red, yellow, and green)

1 cup snap peas

1 medium carrot, julienned

3 green onions, chopped

3 cloves garlic, minced

1 inch ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce (optional, can use vegetarian version)

1 teaspoon sesame seeds (for garnish)

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Cauliflower: If using a head of cauliflower, remove the leaves and core, then cut it into florets. Using a food processor, pulse until it resembles rice grains. If you have pre-packaged cauliflower rice, skip this step.

    Heat the Oil: In a large skillet or wok, heat the olive oil over medium-high heat. Ensure the oil is hot but not smoking to achieve a nice stir-fry.

      Sauté Vegetables: Add the minced garlic and grated ginger to the pan, stirring quickly to prevent burning. After about 30 seconds, add the diced bell peppers, snap peas, and julienned carrot. Sauté for approximately 3-4 minutes until they’re slightly tender but still vibrant.

        Add Cauliflower Rice: Stir in the cauliflower rice, mixing well with the vegetables. Cook for an additional 5-7 minutes, stirring occasionally until the cauliflower is tender but not mushy.

          Season the Stir-Fry: Pour in the soy sauce and oyster sauce (if using). Toss everything together until well coated. Adjust salt and pepper to your taste.

            Final Touches: Sprinkle sesame seeds and chopped green onions on top. Toss lightly and remove from heat.
