Charcuterie Breakfast Muffins

1 ½ cups all-purpose flour

2 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup shredded sharp cheddar cheese

½ cup crumbled feta cheese

½ cup diced cooked bacon or prosciutto

¼ cup chopped fresh chives (or green onions)

3 large eggs

1 cup buttermilk (or milk with 1 tbsp lemon juice)

¼ cup melted unsalted butter

1 tbsp Dijon mustard

Freshly cracked pepper, to taste

Instructions
 

Preheat your Oven: Preheat your oven to 375°F (190°C). Grease or line a muffin pan with paper liners for easy removal.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add Cheese & Meat: Gently fold in the shredded cheddar cheese, crumbled feta cheese, diced bacon or prosciutto, and chopped chives. This adds great flavor and texture to the muffins.

        Combine Wet Ingredients: In a separate bowl, whisk together the eggs, buttermilk, melted butter, and Dijon mustard until smooth.

          Combine Mixtures: Pour the wet mixture into the dry ingredients, stirring just until combined. Be careful not to overmix; the batter should be lumpy.

            Season: Add freshly cracked pepper to taste and give a quick fold to incorporate.

              Fill Muffin Pan: Evenly distribute the batter into the prepared muffin pan, filling each cup about ¾ full.

                Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean and the tops are golden brown.

                  Cool & Serve: Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
