4 cups cooked jasmine rice (preferably day-old)

1 cup assorted charcuterie meats (sliced salami, prosciutto, and chorizo)

1 cup mixed cheeses (cubed cheddar, mozzarella, and gouda)

1 cup mixed bell peppers (diced)

1/2 cup red onion (diced)

1/4 cup green onions (sliced)

3 cloves garlic (minced)

2 large eggs

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil

Salt and pepper to taste

Optional: chopped parsley or cilantro for garnish

Prep the Ingredients: Before you start cooking, ensure all your ingredients are prepped—meats cut into bite-sized pieces, cheese cubed, and vegetables diced.

    Cook the Eggs: Heat a large skillet or wok over medium-high heat. Add a splash of olive oil. Crack the eggs into the pan and scramble until fully cooked. Remove from the pan and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining olive oil. Sauté the red onion and garlic for about 2 minutes until fragrant. Add the bell peppers and continue to cook for an additional 3-4 minutes until they are tender.

        Add Charcuterie: Toss in the assorted charcuterie meats and cook for about 2 minutes, stirring frequently until the meats are heated through.

          Incorporate Rice: Add the day-old cooked jasmine rice to the skillet. Break up any clumps and mix well with the sautéed vegetables and meats. Allow the rice to sit for a minute so it can get slightly crispy.

            Season and Combine: Drizzle the soy sauce and sesame oil over the rice. Add the scrambled eggs back to the pan, mixing everything until fully combined. Season with salt and pepper to taste.

              Finish with Cheese and Green Onions: Remove the skillet from heat and fold in the cubed cheeses and sliced green onions. The residual heat will melt the cheese slightly, creating a gooey, delicious texture.
