Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon garlic powder

3/4 cup warm water

1 tablespoon olive oil

1 cup shredded sharp cheddar cheese

1/2 cup canned green chilies, drained and chopped

1/2 teaspoon cumin (optional)

Fresh cilantro leaves for garnish

Sour cream or Greek yogurt for serving

Instructions

Prepare the Flatbread Dough: In a large mixing bowl, whisk together the flour, baking powder, salt, and garlic powder. Make a well in the center and add the warm water and olive oil. Stir until a shaggy dough forms.

Knead the Dough: Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth. Cover the dough with a clean kitchen towel and let it rest for 15 minutes.

Mix the Filling: In a separate bowl, combine the shredded cheddar cheese, chopped green chilies, and cumin (if using). Mix well until fully combined.

Roll Out the Flatbreads: Divide the rested dough into 6 equal portions and roll each into a ball. Using a rolling pin, flatten each ball into a circle about 1/4-inch thick.

Cook the Flatbreads: Heat a large skillet or griddle over medium-high heat. Cook each flatbread for about 2-3 minutes on each side, or until they are golden brown and slightly puffed. Repeat with the remaining dough.

Assemble the Wraps: Once the flatbreads are cooked, place a generous tablespoon of the cheese and chili filling on one half of each flatbread. Fold the other half over to cover the filling.

Melt the Cheese: Place the folded wraps back on the skillet and cook for an additional 1-2 minutes on each side to melt the cheese inside.

Serve: Remove the wraps from the skillet and garnish with fresh cilantro. Serve warm with a side of sour cream or Greek yogurt for dipping.
