Cheesy Mushroom & Spinach Quiche

1 pre-made pie crust (9-inch)

2 tablespoons olive oil

1 cup mushrooms, sliced (cremini or button)

2 cups fresh spinach, chopped

1 small onion, diced

3 large eggs

1 cup heavy cream

1 cup shredded cheese (cheddar or Gruyère)

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a skillet over medium heat, add the olive oil. Once hot, add diced onion and sauté until translucent (about 3-4 minutes). Then, add the sliced mushrooms and cook until they're golden brown (about 5-7 minutes). Add the chopped spinach and cook until wilted (about 2 minutes). Season with a pinch of salt, black pepper, garlic powder, and nutmeg (if using).

      Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs and heavy cream until well combined. Stir in half of the shredded cheese and season with a bit of additional salt and pepper if desired.

        Combine Ingredients: Once the vegetables are cooked, let them cool for a few minutes. Then, spread the sautéed vegetable mixture evenly over the bottom of the pie crust. Pour the egg and cream mixture over the veggies, ensuring it’s evenly distributed.

          Add Cheese: Sprinkle the remaining shredded cheese over the top of the quiche.

            Bake: Place the quiche in the preheated oven and bake for about 35-40 minutes, or until the quiche is set and the top is lightly golden.

              Cool and Serve: Remove the quiche from the oven and let it cool for about 10 minutes. Garnish with fresh parsley if desired, then slice and serve warm or at room temperature.
