Cheesy Stuffed Potato Skins

4 large russet potatoes

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, crumbled

1/4 cup sour cream

1/4 cup green onions, chopped

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Olive oil for brushing

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash the potatoes thoroughly under running water. Pat them dry with a paper towel. Prick each potato several times with a fork to allow steam to escape during baking.

      Bake Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the skins are crispy and the inside is soft. (Cooking time may vary based on the size of your potatoes). Let them cool slightly after baking.

        Scoop the Flesh: Once the potatoes are cool enough to handle, slice each potato in half lengthwise. Carefully scoop out the flesh, leaving about 1/4 inch of potato on the skin. Transfer the scooped potato into a mixing bowl.

          Mix the Filling: To the potato flesh, add the shredded cheddar cheese, crumbled bacon, sour cream, chopped green onions, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined and creamy.

            Stuff the Skins: Brush the potato skins lightly with olive oil on both sides. Generously fill each skin with the cheesy potato filling mixture.

              Second Baking: Place the stuffed potato skins back on a baking sheet. Bake them in the oven at 400°F (200°C) for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                Serve: Remove from the oven and let them cool for a couple of minutes. Garnish with fresh parsley and additional green onions if desired. Serve hot with extra sour cream on the side.
