Ingredients

1 cup sweet corn kernels (fresh or canned)

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 cup grated cheddar cheese

1/4 cup finely chopped fresh jalapeño (seeds removed for less heat)

1/4 cup green onions, chopped

1 large egg

1/2 cup buttermilk

2 tablespoons olive oil (for frying)

Instructions

Prepare Ingredients: If using fresh corn, remove the kernels from the cob. Finely chop the jalapeño and green onions. Set aside.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, salt, black pepper, and garlic powder. Whisk until well blended.

Add Wet Ingredients: In another bowl, whisk the egg and buttermilk together. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.

Incorporate Corn and Cheese: Fold in the sweet corn, grated cheddar cheese, chopped jalapeño, and green onions into the batter until evenly distributed. Be careful not to overmix.

Heat the Pan: In a large skillet, heat the olive oil over medium heat.

Cook the Cakes: Using a 1/4 cup measure, pour batter into the hot skillet, flattening each mound slightly. Cook until golden brown (about 3-4 minutes), then flip and cook the other side until browned and cooked through. Repeat with remaining batter, adding more oil as needed.

Serve: Transfer the cakes to a paper towel-lined plate to drain any excess oil. Serve warm with a dollop of sour cream or your favorite dipping sauce. Optional: garnish with extra green onions or fresh cilantro.
