8 oz elbow macaroni

1 lb ground beef (or turkey)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) diced tomatoes with green chilies

2 cups chicken broth (or beef broth)

1 cup corn (frozen or canned, drained)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Cook the Pasta: In a large skillet, bring water to a boil and add a pinch of salt. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In the same skillet, add the ground beef over medium heat. Cook until browned (about 5-7 minutes). Use a spatula to break it apart as it cooks.

      Add the Aromatics: Add the diced onion and minced garlic to the skillet. Sauté for another 2-3 minutes until the onion becomes translucent.
