Ingredients

4 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup marinara sauce (store-bought or homemade)

1 cup cooked ground beef or Italian sausage (optional)

1 large egg

2 cloves garlic, minced

1 tablespoon dried oregano

1 tablespoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Zucchini: Slice the zucchinis in half lengthwise. Use a spoon to scoop out the centers, creating a hollow boat for the filling. Place the zucchini boats in a baking dish. If needed, trim the bottoms slightly to ensure they stand upright.

Make the Filling: In a large mixing bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, cooked ground beef or sausage (if using), egg, minced garlic, oregano, basil, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Fill the Zucchini Boats: Spoon the cheese mixture generously into each hollowed zucchini boat. Make sure to pack the filling in to avoid gaps.

Add Marinara Sauce: Spoon marinara sauce over the filled zucchini boats, ensuring each one has a nice layer of sauce.

Top with Cheese: Sprinkle the remaining mozzarella cheese over the top of the marinara sauce for an extra cheesy finish.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Remove from the oven and let cool for a few minutes before serving. Garnish with fresh basil leaves if desired and enjoy your delightful Cheesy Zucchini Lasagna Boats!
