Ingredients

1 lb (450g) chicken sausage, sliced into rounds (your choice of spice)

2 medium zucchinis, sliced into half-moons

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium red onion, quartered

2 cups cherry tomatoes, halved

4 cloves garlic, minced

4 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Veggies: In a large mixing bowl, combine the sliced zucchinis, diced red and yellow bell peppers, quartered onion, and halved cherry tomatoes.

Season the Vegetables: Drizzle the olive oil over the vegetables. Add the minced garlic, dried thyme, smoked paprika, Italian seasoning, and a generous pinch of salt and pepper. Toss to coat evenly.

Combine with Sausage: Add the sliced chicken sausage to the bowl with the seasoned veggies. Toss everything together until well combined.

Prepare the Baking Tray: Spread the mixture evenly on a large baking sheet, ensuring that everything is in a single layer for even cooking.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the vegetables are tender and the sausages are heated through with a slight crisp on the outside.

Serve: Once done, remove from the oven and let it cool slightly. Garnish with fresh parsley if desired, and serve warm.

Enjoy: This dish pairs beautifully with crusty bread or a simple side salad for a complete meal!
