For the Chicken:

1 lb boneless, skinless chicken thighs

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Juice of 1 lime

For the Cherry Slaw:

2 cups fresh red cabbage, thinly sliced

1 cup fresh cherries, pitted and sliced

½ cup grated carrots

¼ cup fresh cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey

1 tablespoon olive oil

Salt and pepper to taste

To Serve:

8 small corn or flour tortillas

Lime wedges

Additional cilantro for garnish

Marinate the Chicken: In a medium bowl, mix the olive oil, smoked paprika, ground cumin, garlic powder, onion powder, lime juice, salt, and pepper. Add the chicken thighs and coat them well. Marinate for at least 30 minutes (or up to 2 hours for deeper flavor).

    Prepare the Cherry Slaw: In a large mixing bowl, combine the sliced red cabbage, sliced cherries, grated carrots, and chopped cilantro. In a small bowl, whisk together the apple cider vinegar, honey, olive oil, salt, and pepper. Pour the dressing over the cherry slaw and toss to combine. Set aside for flavors to meld.

      Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Add the marinated chicken and cook for 6-7 minutes per side, or until cooked through and the internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.

        Warm the Tortillas: In a separate dry skillet over medium heat, warm the tortillas for about 30 seconds on each side, until pliable.

          Assemble the Tacos: For each taco, place a few slices of the cooked chicken in the center of a warmed tortilla. Top with a generous portion of cherry slaw, and garnish with additional cilantro and a squeeze of lime.

            Serve and Enjoy: Serve the tacos immediately with lime wedges on the side for an extra burst of flavor.
