Chili Cheese Turkey Quesadilla Bites

1 lb ground turkey

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) chili beans, drained and rinsed

1/2 cup diced onion

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

Salt and pepper to taste

8 small flour tortillas (6 inches)

1 tbsp olive oil, for cooking

Sour cream, for serving

Fresh cilantro, for garnish (optional)

Jalapeño slices, for garnish (optional)

Instructions
 

Cook the Turkey: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté for 2-3 minutes until translucent. Add the minced garlic and cook for an additional minute.

    Season & Stir: Add the ground turkey to the skillet. Break it up with a spoon and cook until it's browned and cooked through, about 5-7 minutes. Stir in the cumin, chili powder, smoked paprika, and season with salt and pepper.

      Mix in the Beans and Cheese: Once the turkey is fully cooked, stir in the chili beans and a mix of shredded cheddar and Monterey Jack cheeses. Cook for an additional 2-3 minutes until the cheese is melted and everything is well combined.

        Assemble the Quesadilla Bites: Lay out four tortillas on a clean surface. Place the turkey mixture on one half of each tortilla, then fold the other half over to create a half-moon shape.

          Cook the Quesadilla Bites: Wipe the skillet clean and return it to medium heat. Lightly grease with olive oil if necessary. Place two folded quesadillas in the skillet (or cook in batches if necessary) and cook for 3-4 minutes on each side, or until golden brown and crispy. Remove and let cool slightly before cutting.

            Cut & Serve: Use a sharp knife or pizza cutter to cut each quesadilla into bite-sized pieces. Serve warm with sour cream, jalapeño slices, and garnish with fresh cilantro if desired.
