Ingredients

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 bag (12 oz) tortilla chips

2 cups shredded cheddar cheese (or a blend of Monterey Jack and cheddar)

1 can (15 oz) black beans, rinsed and drained

1 cup fresh pico de gallo or diced tomatoes

1 small red onion, finely chopped

1 jalapeño, sliced (optional, for spice)

1 avocado, diced

½ cup sour cream

¼ cup cilantro, chopped

1 tsp cumin

1 tsp chili powder

Salt and pepper, to taste

Lime wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare Chicken: In a bowl, combine the shredded chicken with cumin, chili powder, salt, and pepper. Mix well to coat the chicken evenly with the spices.

Layer Tortilla Chips: On a large baking sheet, spread out the tortilla chips evenly, creating one layer. Try to avoid overlapping too much for even heating.

Add Chicken Mixture: Distribute the seasoned chicken evenly over the chips, ensuring every bite has some chicken.

Add Black Beans and Cheese: Sprinkle the rinsed black beans across the top, then liberally cover with the shredded cheddar cheese (or cheese blend).

Bake: Place the nachos in the preheated oven and bake for about 10-15 minutes, until the cheese is melted and bubbly.

Prepare Fresh Toppings: While the nachos are baking, prepare your fresh toppings. In a small bowl, combine diced avocado, pico de gallo, chopped onion, and jalapeño (if using).

Assemble Nachos: Once the cheese has melted, remove nachos from the oven, and carefully top with the avocado mixture. Add dollops of sour cream, and sprinkle chopped cilantro over the top.

Serve: Serve immediately with lime wedges on the side for a fresh squeeze of citrus.

Enjoy: Dig in while still warm and enjoy the gooey, cheesy delight of classic chicken nachos!
