2 stalks celery, sliced

8 cups low-sodium chicken broth

2 cups rotisserie chicken, shredded

1 bay leaf

2 cups egg noodles

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, and sauté for about 3-5 minutes until translucent. Stir in the minced garlic, sliced carrots, and celery, cooking for an additional 5 minutes until the vegetables begin to soften.
