For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

1 tsp vanilla extract

For the cheesecake filling:

16 oz cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 tbsp lemon juice

For the strawberry topping:

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

2 tbsp cornstarch

1 tbsp lemon juice

1 cup water

Instructions
 

Prepare the crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, melted butter, and vanilla extract. Stir until the mixture resembles wet sand. Press the mixture evenly into the bottom of a 9x9 inch baking pan. Bake in the preheated oven for about 10 minutes, then set aside to cool.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sugar and continue beating. Add the eggs, one at a time, mixing well after each addition. Stir in vanilla extract and lemon juice until fully combined.

      Assemble the cheesecake: Pour the cheesecake mixture over the cooled crust, spreading it evenly with a spatula. Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside for about an hour. Then, transfer to the fridge to chill for at least 2 hours.

        Prepare the strawberry topping: In a saucepan, combine sliced strawberries, sugar, cornstarch, lemon juice, and water. Bring to a boil on medium heat while stirring constantly. Allow the mixture to cook for 3-5 minutes, until it thickens and the strawberries release their juices. Remove from heat and let it cool to room temperature.

          Finish the bars: Once the cheesecake has chilled, pour the strawberry topping evenly over the cheesecake layer. Carefully spread it out with a spatula. Return to the fridge and chill for an additional 1 hour to allow the flavors to meld.

            Serve: Once set, remove the cheesecake bars from the baking pan by lifting the edges of the parchment paper (if using). Cut into squares and serve cold.
