1 cup Medjool dates, pitted

1 cup unsweetened shredded coconut, plus extra for rolling

1/2 cup raw almonds or walnuts

2 tablespoons coconut oil, melted

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1 tablespoon chia seeds (optional)

1 tablespoon cocoa powder (optional for chocolate flavor)

Instructions
 

Prep the Dates: If your dates are hard, soak them in warm water for about 10 minutes to soften. Drain and pat dry.

    Blend Ingredients: In a food processor, combine the pitted dates, shredded coconut, nuts, melted coconut oil, vanilla extract, sea salt, and chia seeds (if using). For a chocolate variation, add cocoa powder.

      Process: Blend on high until the mixture is well combined and sticky. You may need to scrape down the sides of the processor a few times to ensure everything is mixed evenly.

        Form the Bites: Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is formed into bites.

          Coat the Bites: Roll each bliss bite in the remaining shredded coconut to coat them evenly, giving them a beautiful finish.

            Chill: Place the coated bites on a baking sheet lined with parchment paper. Chill in the refrigerator for about 30 minutes to firm up.
