Ingredients

2 medium zucchini (spiralized into noodles)

2 cups cooked chicken breast (shredded or diced)

1 cup cherry tomatoes (halved)

1 cup cucumber (diced)

1/2 red onion (thinly sliced)

1 avocado (diced)

1/4 cup fresh basil leaves (chopped)

1/4 cup feta cheese (crumbled)

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes (for a kick)

Instructions

Prepare the Zoodles: Start by spiralizing the zucchini into noodles. If you don’t have a spiralizer, use a vegetable peeler to create thin strips. Place the zoodles in a colander over the sink, sprinkle lightly with salt, and let them sit for about 10 minutes to draw out excess moisture. After 10 minutes, pat them dry with a paper towel.

Mix the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, pepper, and red pepper flakes (if using) until well combined. Set aside.

Combine the Ingredients: In a large mixing bowl, add the zoodles, cooked chicken, cherry tomatoes, cucumber, red onion, avocado, and basil.

Dress the Salad: Pour the dressing over the zoodle mixture and gently toss everything together until well combined and evenly coated.

Finish with Feta: Sprinkle the crumbled feta cheese on top and give it one final gentle toss.

Chill and Serve: For the best flavor, let the salad chill in the refrigerator for about 15-20 minutes before serving. This allows the ingredients to meld together beautifully. Serve it cold, and enjoy your refreshing salad!
