Ingredients
  

2 cups fresh corn kernels (or 1 can, drained)

1 cup red bell pepper, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/2 cup black beans, rinsed and drained

1/2 cup avocado, diced

1/4 cup cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

Optional: 1 jalapeño, finely chopped (for heat)

Instructions
 

Prepare the Ingredients: If using fresh corn, boil or grill the corn until tender, then let it cool. Cut the kernels off the cob.

    Combine Vegetables: In a large mixing bowl, combine the corn, red bell pepper, cherry tomatoes, red onion, black beans, avocado, and cilantro.

      Make the Dressing: In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper. If desired, add the finely chopped jalapeño for an extra kick.

        Mix Everything Together: Pour the dressing over the salad mixture and gently toss until all ingredients are evenly coated.

          Chill: Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 30 minutes to allow flavors to meld.
