Ingredients
  

8 oz rice noodles

1 cup cooked chicken breast, shredded

1 cup cucumber, julienned

1 cup carrots, julienned

1 red bell pepper, thinly sliced

2 green onions, chopped

1/4 cup fresh cilantro, chopped

1/4 cup peanuts, crushed (optional for garnish)

For the Sauce:

3 tbsp peanut butter

2 tbsp soy sauce

2 tbsp lime juice

1 tbsp honey or maple syrup

1 tbsp sesame oil

1-2 tsp Sriracha (adjust for spice preference)

1 clove garlic, minced

1 tsp ginger, grated

Instructions
 

Cook the Noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, Sriracha, minced garlic, and grated ginger until smooth. If the sauce is too thick, add a little warm water to reach the desired consistency.

      Combine Ingredients: In a large mixing bowl, combine the cooked noodles, shredded chicken, cucumber, carrots, red bell pepper, green onions, and cilantro.

        Dress the Salad: Pour the sauce over the noodle and vegetable mixture. Toss gently until everything is well coated.

          Chill: Cover the mixture with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the dish to chill.
