Ingredients

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

1 teaspoon ginger, grated

1 red bell pepper, diced

2 medium sweet potatoes, peeled and cubed

1 can (15 oz) chickpeas, drained and rinsed

1 can (14 oz) diced tomatoes (with juice)

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon turmeric

¼ teaspoon cayenne pepper (optional, for heat)

Salt and black pepper to taste

2 cups spinach or kale, chopped

Juice of 1 lemon

Fresh cilantro or parsley, for garnish

Instructions

Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until it becomes translucent, about 5 minutes.

Add Aromatics: Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

Incorporate the Vegetables: Add the diced red bell pepper and cubed sweet potatoes to the pot. Cook for roughly 5 minutes, stirring occasionally.

Mix in the Chickpeas & Spices: Add the drained chickpeas, diced tomatoes (with their juice), vegetable broth, cumin, smoked paprika, turmeric, cayenne pepper (if using), salt, and black pepper. Stir well to combine.

Simmer the Stew: Bring the stew to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 25-30 minutes, or until the sweet potatoes are tender and cooked through.

Add Greens: Once the sweet potatoes are tender, stir in the chopped spinach or kale. Allow it to wilt for about 2-3 minutes.

Finish with Lemon Juice: Remove the pot from heat and stir in the juice of one lemon. Adjust seasoning as needed.

Serve: Ladle the stew into bowls and garnish with fresh cilantro or parsley. Enjoy your warm, cozy meal!
