12 oz spaghetti or fettuccine

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1/4 cup fresh basil leaves

1/4 cup fresh lemon juice (about 1 large lemon)

1/4 cup extra-virgin olive oil

1/4 cup grated Parmesan cheese (plus more for serving)

Salt and black pepper to taste

Pinch of red pepper flakes (optional)

Cherry tomatoes, halved (for garnish)

Toasted pine nuts (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Make the Avocado Sauce: In a food processor, combine the ripe avocados, minced garlic, basil leaves, lemon juice, and olive oil. Pulse until smooth and creamy. If you prefer a thinner consistency, add some reserved pasta water gradually and blend until desired thickness is achieved.

      Combine Pasta and Sauce: In a large mixing bowl, add the cooked pasta. Pour the creamy avocado sauce over the warm pasta. Toss gently to combine, ensuring every strand is coated with the luscious sauce.

        Season: Sprinkle the grated Parmesan cheese and stir gently. Season with salt, black pepper, and red pepper flakes to taste. If the sauce is too thick, add more reserved pasta water as needed.
