8 oz rotini pasta (or pasta of choice)

2 ripe avocados, diced

1/2 cup plain Greek yogurt

1/4 cup mayonnaise

1 packet ranch seasoning mix (1 oz)

1 cup cherry tomatoes, halved

1 cup frozen sweet corn, thawed

1 cup bell peppers, diced (any color)

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped (optional)

Salt and pepper, to taste

Juice of 1 lime

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse with cold water to cool the pasta. Set aside.

    Prepare the Creamy Dressing: In a blender or food processor, combine the diced avocados, Greek yogurt, mayonnaise, ranch seasoning mix, and lime juice. Blend until smooth and creamy. Season with salt and pepper to taste.
