1 cup orzo pasta

2 tablespoons olive oil

1 onion, diced

3 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup vegetable broth

1 cup grated Parmesan cheese

1 teaspoon lemon zest

2 tablespoons lemon juice

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Orzo: In a large pot, bring salted water to a boil and cook the orzo according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-5 minutes, or until translucent. Add the minced garlic and cook for an additional minute until fragrant.

        Add Spinach: Stir in the chopped spinach, cooking until wilted, about 2-3 minutes. Remove from heat.

          Combine Ingredients: In a mixing bowl, whisk together the heavy cream, vegetable broth, lemon zest, lemon juice, salt, black pepper, and red pepper flakes if using. Add the cooked orzo to the skillet with the sautéed spinach and pour the cream mixture over it. Stir well to combine.
