Creamy Broccoli Rice Bake

2 cups cooked jasmine or basmati rice

2 cups fresh broccoli florets (blanched)

1 cup shredded cheddar cheese (divided)

1 cup cream of mushroom soup (or homemade creamy mushroom sauce)

1/2 cup sour cream

1/2 cup milk

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for some heat)

1/4 cup breadcrumbs (for topping)

2 tablespoons olive oil or melted butter

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: Blanch the broccoli florets in boiling water for 2-3 minutes until bright green and tender but still crisp. Drain and set aside.

      Mix Base Ingredients: In a large mixing bowl, combine the cooked rice, cream of mushroom soup, sour cream, milk, 3/4 cup of cheddar cheese, garlic, onion powder, garlic powder, salt, black pepper, and red pepper flakes. Stir until well combined.

        Add Broccoli: Gently fold in the blanched broccoli florets into the rice mixture, ensuring everything is well incorporated.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

            Prepare Topping: In a small bowl, mix the breadcrumbs with the remaining 1/4 cup of cheddar cheese, Parmesan cheese, and olive oil or melted butter. Mix until the crumbs are evenly coated.

              Assemble: Sprinkle the breadcrumb mixture evenly over the rice and broccoli mixture in the baking dish.

                Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the dish is heated through.
