8 oz fettuccine or pasta of choice

1 lb large shrimp, peeled and deveined

2 cups fresh corn kernels (about 2 ears) or canned corn, drained

3 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup heavy cream

1 cup chicken or vegetable broth

2 tablespoons Cajun seasoning (adjust to taste)

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup freshly grated Parmesan cheese

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the rest and set aside.

      Prepare the Shrimp:

        - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the shrimp with salt, pepper, and 1 tablespoon of Cajun seasoning. Add the shrimp to the skillet and sauté until they are pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.

          Sauté the Vegetables:

            - In the same skillet, add another tablespoon of olive oil. Sauté the onion and bell pepper until softened, about 5 minutes. Add the garlic and cook for an additional minute until fragrant.

              Add Corn and Spices:
