1 medium head of broccoli, chopped into florets

1 medium onion, diced

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free option)

2 tablespoons olive oil

1 teaspoon thyme (dried or fresh)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for a spicy kick

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it turns translucent. Stir in the minced garlic and cook for another minute, until fragrant.

    Add Cauliflower and Broccoli: Toss in the chopped cauliflower and broccoli florets. Sauté for about 5 more minutes, allowing them to slightly soften.
