2 tablespoons olive oil

4 cloves garlic, minced

5 cups fresh spinach (baby spinach works great)

1 cup heavy cream

1 cup grated Parmesan cheese

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh basil, chopped (for garnish)

Zest of 1 lemon (optional)

Cook the Penne: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Sauté Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1-2 minutes, until fragrant and golden. Be careful not to burn the garlic.

      Add Spinach: Gradually add the fresh spinach to the skillet, stirring until wilted, which should take about 3-4 minutes. If necessary, add a splash of the reserved pasta water to help wilt the spinach.

        Prepare the Cream Sauce: Lower the heat to medium-low. Pour in the heavy cream and stir well to combine. Allow it to simmer gently for 2-3 minutes until slightly thickened.

          Incorporate Cheese: Add the grated Parmesan cheese and red pepper flakes to the cream sauce, stirring continuously until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.
