4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup cherry tomatoes, halved

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and dried Italian herbs. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for about 5 minutes on each side until they are golden brown. Remove from skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped spinach and halved cherry tomatoes. Cook for 2-3 minutes, until the spinach is wilted.

        Make the Creamy Mixture: In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Add a pinch of salt, pepper, and the sautéed spinach mixture. Mix well until all ingredients are thoroughly combined.

          Combine Everything: Return the chicken breasts to the skillet and spoon the creamy spinach mixture over each breast. Sprinkle the remaining mozzarella and Parmesan cheese on top.

            Bake: Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the cheese is bubbly and golden.
