1 cup ricotta cheese

1/2 cup grated Parmesan cheese, plus extra for serving

Zest of 1 lemon

Juice of 2 lemons

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

Fresh basil leaves, for garnish

1/4 cup pasta cooking water (reserved)

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or linguine according to package instructions until al dente. Reserve 1/4 cup of pasta cooking water, then drain the pasta and set aside.

    Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes (if using). Sauté for about 30 seconds, until fragrant, but be careful not to burn the garlic.

      Combine Ricotta and Lemon: In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, lemon zest, and lemon juice. Whisk until smooth and creamy. If the mixture is too thick, add a splash of reserved pasta water until you reach a smooth consistency.

        Mix Pasta and Sauce: Add the cooked pasta to the skillet with the garlic and olive oil. Toss to coat the pasta in the oil. Pour the ricotta mixture over the pasta, stirring gently to combine. If the sauce seems too thick, add a little reserved pasta water until you achieve your desired creaminess.
