To create the perfect creamy pumpkin Alfredo sauce, the technique you use is crucial. Begin by sautéing minced garlic in a generous amount of olive oil or butter. Heat control is essential here; you want the garlic to become fragrant without browning. Start with medium heat, allowing the garlic to soften for about 1-2 minutes. Once it releases its aroma, you can lower the heat to prevent burning, which would impart a bitter flavor to your sauce.

Ingredients

12 oz fettuccine or your favorite pasta

1 cup canned pumpkin puree (not pumpkin pie filling)

1 cup heavy cream

1/2 cup grated parmesan cheese

2 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon dried sage or 1 tablespoon fresh sage, chopped

1/2 teaspoon nutmeg

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: Toasted pumpkin seeds (for topping)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.

Prepare the Sauce: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

Combine Ingredients: Stir in the pumpkin puree, heavy cream, and dried sage. Cook for another 2-3 minutes until the mixture is heated through and slightly thickened.

Add Cheese and Season: Reduce the heat to low and mix in the grated parmesan cheese until melted and smooth. Add nutmeg, salt, and pepper to taste. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

Toss the Pasta: Add the cooked pasta to the sauce, tossing gently until the pasta is well coated.

Serve: Plate the creamy pumpkin alfredo pasta and garnish with chopped parsley and toasted pumpkin seeds, if desired.

Enjoy! Serve immediately and enjoy your delicious creamy pumpkin Alfredo pasta!
