Creamy Roasted Carrot Soup

2 pounds of carrots, peeled and chopped

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer option)

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh thyme leaves, for garnish

Optional: Croutons or toasted pumpkin seeds for topping

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Carrots: In a large mixing bowl, toss the chopped carrots, diced onion, and minced garlic with olive oil, cumin, smoked paprika, salt, and pepper until evenly coated.

      Roast Vegetables: Spread the carrot mixture evenly on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through.

        Blend Soup: Once the vegetables are roasted, transfer them to a large pot. Add the vegetable broth and bring to a simmer over medium heat. Let it simmer for about 5 minutes to combine the flavors.

          Add Creaminess: Remove the pot from heat, and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer batches of the soup to a countertop blender (be careful with the hot liquid!) to achieve a creamy consistency.

            Stir in Coconut Milk: Return the blended soup to low heat and stir in the coconut milk (or cream), adjusting seasonings with additional salt and pepper if desired. Heat until warm but not boiling.

              Serve: Ladle the soup into bowls and garnish with fresh thyme leaves, and add croutons or toasted pumpkin seeds if using.
