4 cups seedless watermelon, cubed

1 cup coconut cream (chilled)

1/4 cup fresh lime juice

1/4 cup honey or agave syrup (adjust to taste)

1/2 teaspoon vanilla extract

Prep the Watermelon: Start by cutting the watermelon into cubes. Place the watermelon cubes on a baking sheet in a single layer and freeze for about 2 hours or until solid.

    Blend Ingredients: Once frozen, place the watermelon cubes into a high-speed blender or food processor. Add the coconut cream, fresh lime juice, honey or agave syrup, vanilla extract, and a pinch of salt.

      Blend to Perfection: Blend the mixture until smooth and creamy. You may need to stop and scrape down the sides to ensure everything is well combined. Taste and adjust the sweetness if needed.

        Chill the Mixture: Pour the creamy watermelon mixture into a shallow container with a lid. Place it in the freezer for about 30 minutes to allow it to firm up slightly.

          Churn for Creaminess (Optional): For a unique texture, you can churn the mixture in an ice cream maker for about 20 minutes if you prefer an ultra-creamy sorbet. If you don't have an ice cream maker, simply stir it every 30 minutes for 2-3 hours until it reaches your desired consistency.
